1 head of chicory

Preparation
Arrange the fries in a baking tray covered with parchment paper and bake them in a preheated oven at 220 ° C for 13 minutes. Preparation of the ingredients: Wash and boil the chicory. Once cooked, proceed to sauté it again. Pour the oil into the pan with the garlic. Add the chicory with the chilli and sauté for 10 minutes. In another pan, melt some butter for frying the egg. Slice the pecorino romano. Preparation of the toast: Melt some butter in a pan. Place the two wholemeal toasts and cook them 2-3 minutes per side until the surface is golden. Remove the potato chips from the oven. Season them with a pinch of salt. Compose the toast in this way: first slice of toast as a base, then pecorino romano, then sautéed chicory and finally the fried egg. Close with the second toast. Proceed to serve with the Patasnella fries.
